Wild Rice Burger & Roasted Veggies. Still at Cooper.

Cucumber and Hummus. A lot of Hummus.

Zucchini, onions and sweet peppers sauteed. Topped with marinara sauce and basil.
Veganized Mac N Cheeze. Recipe to follow.
Pita Pizza
Preheat oven to 350 degrees. Slice a pita in half so you have two thinner pita circles. Yep, you read right, this makes two pizzas. Top each half with marinara sauce and delicious toppings. In this case, basil, nutritional yeast, zucchini, onions and sweet peppers. Bake for 10 minutes. Enjoy.
Mac N Cheeze
Greatest idea ever. Take 4 tbsp Impersonator Cheese and dilute with 1 cup of almond milk to make a sauce. It may look like a lot, but it thickens and contracts when you heat it. Cook noodles according to package directions. Sautee zucchini and onions. Add Impersonator Cheese Sauce to zucchini/onion mix. Toss in noodles. Enjoy.

Also, I am on my lunch break and don't have time to explore your blog, but I was wondering why you eat vegan. I have just realized that (I am pretty sure at least) that I cannot eat/drink milk and yogurt. It was a tragic find, but my body is revolting against it as of late. Sad times.
